Goes great with a grilled steak or pork chop

Yield: 6 servings
2 | pounds | red potatoes, cut into chunks (6 to 7 potatoes) | |

1/3 | cup | sour cream | |
|
|||
1/3 | cup | mayonnaise | |
|
|||
1/4 | cup | crumbled blue cheese | |
|
|||
1/2 | pound | bacon, cooked and crumbled (about 9 slices) | |
|
|||
1 | Tablespoon | fresh chopped parsley | |
|
Place potatoes in large saucepan. Cover with water and boil until tender, about 15 minutes.
In a small bowl, combine sour cream and mayonnaise until smooth. Stir in blue cheese crumbles.
Drain potatoes; gently stir in blue cheese mixture; sprinkle with bacon and parsley and serve hot or refrigerate and serve cold.
